The regional lunch of Day 3 of Madrid Fusion Manila, was themed: corn. Using another staple ingredient very popular around the Philippines, skilled local chefs cooked up dishes to showcase the diverse ways of preparing corn.

Today was the last day of Madrid Fusion Manila 2017. The final group of renowned chefs took to the SMX Convention Centre stage to present and discuss their aesthetic, skills and passions. This set of stellar chefs shared their life experiences, advice and showcased what they are all truly made of as they prepared dishes in front of countless media representatives, epicurean guests, and fans.

MANILA -- Ingredients were a central issue for several chef-speakers at Madrid Fusión Manila. In particular, the focus was on issues of accessibility and sourcing, and the possibilities inherent in cooking with newly discovered, unorthodox ingredients.

Filipino-American pastry chef Sally Camacho, for instance, gave full rein to her love for duck eggs in a series of original desserts.

Sustainability has been a big word in the ongoing third Madrid Fusión Manila (MFM) at the SMX Convention Center in Pasay in keeping with its theme of working “Towards a Sustainable Gastronomic Planet.”

As two of the featured chefs at yesterday’s series of presentations attested to, sustainability can be achieved within one’s kitchen and by following age-old traditions.
