Chef-director of the restaurant Annua, the bistro Nácar by Annua and the fusión inspired gastropub Mexsia Santander, Oscar Calleja is one of the signature chefs most established and most critically acclaimed in the current gastronomy scene.
At 20, he was already the director of a Spanish restaurant in Paris and has worked under and collaborated with masters such as Juan Mari Arzak, Ferrán Adrià, Dani García, Pedro Larumbe, and Toshiro Konishi, co-creator with Nobu of Nikkei cuisine.
Four years after opening his restaurant in a former oyster bar in the Bahía de San Andrés, San Vicente de la Barquera (Cantabria), his restaurant Annua joined the exclusive list of Michelin star restaurants (2012), a qualification that he continues to maintain today.
The year before, he had been given the Most Outstanding New Chef award at the international gastronomy summit, Madrid Fusión; and Annua is accredited with one Repsol sun for culinary excellence.
Today, he is a reference point in international cuisine, sharing his experience and personal philosophy of fine dining in Mexico and serving as a consultant in restaurants both within Spain and abroad. He was a chef speaker at Madrid Fusion (2016) and is now in the second edition of Madrid Fusión Manila.
