Mario is the youngest person to receive a Michelin star at age 26. His mother inherited Coque, an eating house in Humanes, where he and his older brothers all work together to keep the family business going.

He studied at the Madrid Hospitality School, then later worked at several restaurants while attending Cordon Bleu courses. Some of his teachers include Salvador Gallego, Juan Mari Arzak Pedro Subijana, and Ferran Adrià. After school and training, he took over Coque, and since then, has created several masterpieces which achieved various recognition.

After receiving his first Michelin star, Mario won the Spanish Chefs Championship, making him the representative of Spain at the Bocuse d'Or. His other achievements include 2003 Silver Medal, Community of Madrid, Alimentos de España Best Restaurant Award, and Best Restaurateur (Madrid Chamber of Commerce); 2004 Nadal Gastronomy Award (Barcelona Association of Chefs and Patissiers) and Spanish Cehs Championship; and 2013 Spain National Gastronomy Award - Best Chef.

Mario Sandoval's creations can be described as traditional products treated in a creative, avant-garde, and artistic way.
