Some of his teachers include Salvador Gallego, Juan Mari Arzak Pedro Subijana, and Ferran Adrià. After school and training, he took over Coque, and since then, has created several masterpieces which achieved various recognition.

After receiving his first Michelin star, Mario won the Spanish Chefs Championship, making him the representative of Spain at the Bocuse d'Or. His other achievements include 2003 Silver Medal, Community of Madrid, Alimentos de España Best Restaurant Award, and Best Restaurateur (Madrid Chamber of Commerce); 2004 Nadal Gastronomy Award (Barcelona Association of Chefs and Patissiers) and Spanish Cehs Championship; and 2013 Spain National Gastronomy Award - Best Chef.
