Paco Roncero can be considered as one of the key persons who placed Madrid on Spain's gastronomy map. The creator of a culinary investigation workshop unique in the world and Kitchen manager software, Paco pioneered the modernist cuisine and innovative gastronomy in Madrid, and is now known as the best Ferran Adria protégé.

Paco trained in the late 1980s at Madrid Higher School for Hospitality and Tourism at age 18. He took his first professional position at Zalacaín, the first restaurant in the city to receive three Michelin stars. After spending time there, Paco moved to the Hotel Ritz, and then to Casino de Madrid.

At La Terraza del Casino in Madrid, he earned two Michelin stars--one in 2002 and in 2009--and three Repsol suns. In 2004, he was one of the two chefs appointed for the Spanish crown prince's wedding. Before he established his own restaurant, he was considered the highest representative of avant-garde cuisine in Madrid.

In 2012, he partnered with King Parrot Group and opened his flagship restaurant called View 62, Madrid's only revolving restaurant featuring a 360-degree panoramic view of Hong Kong. Paco has his share of the limelight having received recognition from different award-giving bodies, such as 2005 Chef l’Avenir by the Académie Internationale de la Gastronomie; 2006 Chef of the Year Award, Real Academia Española de Gastronomía; and 2010 Madrid Turistic Excellence Award.
