After a short but successful cooking stint in Robot in Makati, a restaurant featuring Japanese-fusion cuisine, Chef Bruce opened his very own degustation spot, Sensei Sushi, in November 2012. Combining authenticity with modern cooking techniques, Sensei Sushi became one of the most frequented dining spots in BF Homes, Paranaque.

Moving his omakases to a more appropriate setting and environment, Chef Bruce opened Mecha Uma in partnership with the Moment Group. Mecha Uma is a chef-driven restaurant which means “absurdly delicious food.”

Known to be one of the youngest chefs in Manila, Chef Bruce used his experiences from famous restaurants in California to prove that age has nothing to do with success. Recalling his early days as a dishwasher in States, Chef Bruce worked his way up by working for a few chefs and eventually becoming a cook himself.

Chef Bruce studied Culinary Management at the Art Institute of San Diego. It was his mentor Jason Knibb who made him understand ingredients and changed the way he looked at food.
