Taiwan-born André moved from Japan to France at 15. Slowly, he built his resume that includes a long line of Michelin-starred establishments such as Pierre Gagnaire (3 stars), L’Atelier de Jöel Robuchon (2 stars), L’Astrance (3 stars), La Maison Troisgros (3 stars), and Le Jardin des Sens (1 star).
With intense passion and unassuming charm, his magnetism is as irresistible as his cuisine. For this, he was named as one of Asia’s Top 10 Young Chefs and Best 150 Relais Gourmand Master Chefs of the World. He attributes his style—a combination of Mediterranean accents and French technique—and success to the three generations of Masters in Nouvelle Cuisine, as well as the inspiration he draws from the selection of produce he uses every day.
Since 2010, Chef André Chiang has made his mark on Singapore’s culinary scene with the opening of Restaurant André. The restaurant ranked 68 on San Pellegrino’s World’s Best Restaurants list and named one of the best ten restaurants in the world worth a plane ride by The New York Times.
Apart from the awards and recognitions André has earned, he gives importance to his philosophical approach to cuisine, which is to only use the freshest of seasonal produce. The pillars of his “octaphilosophy” are unique, pure, texture, memory, salt, south, artisan, and terroir. Each is reflected in every aspect of his cuisine, from purveyor to technique, texture, and color.
